Next meeting in Reykjavik

The fourth six months meeting of SAFEFISHDISH was hosted by NOFIMA in Stavenger, Norway, from 18 to 19 September 2017. Eleven researchers from eight research institutes, university and industry attended this meeting.

Different treatments, i.e. chitosan coating and 4 protectives cultures (PC1, PC2, PC3, PC4) were applied on cod pieces and quality was evaluated during 14 days of storage at 2°C under CO2/N2/O2 (55/40/5). Chitosan and PC1 delayed Photobacterium, Pseudomonas and H2S+ bacteria. Raw and cooked samples showed better quality than untreated cod for chitosan and PC1-PC2 on day 10. Chitosan was the most effective treatment for raw salmon stored under 60% CO2/40% N2; 4°C, 15 days. All the PCs resist to superchilling. The PC did not prevent the spoilage of cold-smoked salmon but the initial endogenous contamination of control was very high (106 CFU/g). Gravelax treated with PC1 and PC2 showed a better quality. Additionally PC1 prevented the growth of Listeria monocytogenes.
